There are 600 trees in the orchards at Olivopolis. There are five varieties of Tuscan olives, which were chosen and carefully blended to create a flavorful, fruity oil with a peppery finish. When they reach maturity (at 8-10 years), each tree will produce approximately one gallon of oil per year. The olives are harvested as late in the year as possible — usually the end of November — at peak ripeness, just before the first frost.
